Parsnip

[Summer 2019 – Columbus, OH]

This is our very first experience of growing parsnip. With the lack of knowledge, we planted the seeds directly in the soil in early June. But it is not the best practice to grow them. We should plant them in late spring and harvest them in winter after a few touches of frost. They need weed-free loose soil and regular watering. Our plants didn’t get any pest damages.

Parsnip is high in vitamins, minerals, potassium and contains antioxidants and dietary fiber. According to history, Romans cultivated this native to Eurasia plant in ancient times. Because of its sweet flavor, Europeans used parsnip as a sweetener before the arrival of cane sugar.
