This year we grew our very first sunchokes. They are a sunflower variety native to North America and used as a root vegetable. Sunchoke is considered an invasive perennial plant. They look similar to ginger in appearance, and serve as a good alternative for potato during winter. It has an earthy flavor with a crispy and crunchy texture.
