Hot pepper

[Summer 2018 – Columbus, OH]

As in 2017, this year also we grew hot pepper using the seeds of the same store-bought Thai dried chili pack. In mid-May, seeds were sprinkled directly on the soil and lightly covered with extra potting soil. Pepper plants love warm temperatures and need regular watering. This year we grew chili with green onions to control pests by companion planting. In late August we got our first pepper harvest of 2018. But this year, surprisingly, we got different varieties. We got plenty of bird’s eye chili plants, some Thai chili plants, and a very colorful unknown new pepper plant. 🙂

A colorful hot surprise. 

We have no idea about this exotic pepper plant. These chilies changed the color in different stages of its maturity. They are super hot when they are green and mild their hotness when turning into red. Sometimes it can be a new trait, who knows! 🙂 ❤

Thai chili pepper

How to freeze hot green chili.

  1. Wash and cut peppers into slices
  2. Freeze pepper overnight in a single layer on a baking sheet
  3. Transfer them into a freezer bag

It can keep up to 8 months in the best quality.
