Sweet Potato

[Summer 2018 – Columbus, OH]

This is our second year of growing sweet potatoes. So we bought a sweet potato just two-three months before the growing season and let it create sprouts under grow lights. In May we made a raised bed and planted the sweet potato. Sweet potatoes need regular watering, other than that they are super easy to maintain. After four months, that single sweet potato gave us 12 pounds of harvest. Not only the tubers, but we can also make tasty recipes even from sweet potato greens, and they are highly nutritious.

Frozen Sweet Potatoes

  1. Wash and clean the sweet potatoes and cut them into bite size pieces.
  2. Steam the sweet potatoes and let them cool.
  3. Wrap the portion for a single meal in a plastic wrapper, put them into a freezer bag and keep them in the freezer.

It can keep up to 8 months in the best quality. They do no show any taste difference. So you can use them in curries, soups or just as steamed sweet potatoes.
